They are well-established, and largest Vanilla farmers association in Sri Lanka with more than 2000 Vanilla farmer communities spread 10 Districts of Tropical island. Therefore, all vanilla comes by the direct contact with farmers, excluding intermediaries.

NYC Ceylon Vanilla beans are farming, harvesting, and processing as per the standards quality(100% under supervision of CSC). Vanilla is a forms a flowering plant genus of about 110 species in the orchid family. The vanilla plant is an herbaceous climbing vine. Therefore it requires a supporting tree or pole for optimal growth. Bees and hummingbirds naturally pollinate the beautiful trumpet-shaped vanilla flowers or human hand-pollinated.
Unripe vanilla pods turn yellow when they grow 5 to 8 inches long. Mature and ripe pods are dark green, ready to be picked. These pods contain vanilla seeds, which are used in many recipes when dried. These are then blanched in boiling water, sweated, and sun-dried for a few weeks until they turn dark brown and wrinkled.
Blanched and sun-dried pods are called vanilla beans used to prepare vanilla extract by soaking it in ethyl alcohol. The filtrate of this fermentation process is vanilla extract. Then the white crystalline essence known as vanillin is extracted from some superior quality beans. This essence is referred to as the vanilla flavour.
